| | ordering bbq over the cb radio
Hi Guys, I have a question for you's.
First of all I`m not a truck driver although I do appreciate the fact that you fellows are what keeps the country rolling.
I am in Ontario Canada and am opening up a true woodsmoked bbq shack on HWY 6 in Waterdown which is a run of HWY between the 403 and the 401.
Some of you may know the hwy.
Anyways, I`m not here plugging my business, I`m really trying to get a feel of how it will be accepted by the people that will travel the road the most....the truckers.
There are no other food service joints here in Ontario that offer true woodsmoked pulled pork, beef brisket, bbq baked beans and potato/macaroni salad for take out or for eat it for that matter.
No one is willing to take the 14 hours to properly smoke a pork butt.
Anyways, if there was a little shack like that on your route, would you consider stopping to try the fare?
I`m considering taking orders from the truckers via cb radio as they get closer to the shack.
The price for a take-out tray of pulled pork piled high on a bun with bbq baked beans and a heavy salad would be around the $7.50 mark but a very heafty portion.
I`m still in the initial stages of setting up camp by complying with city regs and the go ahead stamp from the health dept.
All the meat will be cooked in a bbq using hickory and apple wood.......no propane and no charcoal.
Any little tip or anything you might want to suggest will be greatly appreciated.
Thanks guys, I know you are probably getting a little sick and tired with greasy burgers, fries and hot hamburg sandwiches..........

Huck.... | Yes I would stop there,word of mouth would get around about the place with your hours of operation and the quality and quanitity of food.There is a similar type setup where I'm running,they are open during the summer hours only as they serve bbq burgs,hotdogs,cookies,and she has a cooler in the shack with pop,juice and water.Behind the shack is a shaded area with picnic tables for people to sit.goodluck.

Thanks very much for your reply.
Yeah, i`m hoping WHEN I DO get up and running that word of mouth will serve me well.
I`m also very very aware how work of mouth can hurt a business just as quick so I`m focused on cooking the food with the very same care that I did while competing in bbq competitions......make the first bite count as you only get one chance to make a great impression.
As a side for the pulled pork there will also be the option of a Southern Style dipping sauce as there also will be one for the beef.
Just simple smoked foods, cooked to the right temp AT the right temp using only 100% hardwoods for fuel.
Once in a while I`ll smoke a couple of sucking pigs for pig-on-a-bun with beans and slaw.

Thanks a lot Jeff, I truly appreciate that.
For now I was just trying to get a feel for any interest in a joint like that from drivers.
Thanks for the offer, I`m probably 3 to 6 weeks away from being Open For Business so when the date gets closer, I`ll take you up on that offer.
