Default Other than Home, where's the best place to eat?

I'm OTR 21 days each trip. Mostly Interstate driving, but some other highways. Usually I make the perimeter runs, Alabama, to Carolinas, to NJ. Sometimes I play around in PA and then back to KY and TN. Or seems like I can spend days in Chicago and never go anywhere. Anyway, I was wondering about eating. I take along food since I have a fridge in the truck, but sometimes I like to stop and have something different. The major truckstop buffets are all the same, and not very good. I've heard about a couple of cafe's that are pretty good, but haven't had the opportunity to stop yet. So, have any of you got some favorite stops, where the food is good and the coffee is better?

The tiger truck stop on 10 in louisiana has awesome food, especially if you like jambalaya, crawfish, etc...

I liked the Steel City Restaurant in Gary, IN., the one across from the hook however this information is 6 years old.
Casey Jones Restaurant, x 80 something, I-40, TN.
It's definitely different yet there is a severely small truck parking area. NO SMOKING.

In PA:
I78:Exit 45; New Smithville Diner(next to the Bandit truck stop)
Exit 16:Midway Diner
Exit 10:Frystown All American
Exit 8:Small little diner that starts with an E(can't remember name right now)

I83:Exit 28; 83 Diner

Route 30:Jenni's just east of Lancaster

Route 41:Chuck stop Truck stop

PA got a lot of real good small Mom and Pop places to eat with truck parking. Just got to find most of them. It helps to get on the radio and ask the drivers that run the area a lot, you may be surprised at what you find

If you find yourself on I84 in NY, stop at the 84 diner at x12. Good food and the dessert/pastry counter in the front will give you need to buy a new belt. Very limited truck parking in back however. Best to approach from the west can see the parking lot before you exit.
